Christmas Pudding Energy Balls

Energy balls always go town a treat in my house. So much so that I’ll often go back the next day, in need of a little pick-me-up, to find that they’re all gone! I’m not complaining, at least my family are eating whole, healthy foods without even realising! As it is Christmas, I decided to get oh so festive with some Christmas pudding inspired energy balls, ready to have on the go, or smothered in creamy coconut yoghurt for an indulgent treat.

 

Ingredients: makes around 8

1 cup of cashews

10 medjool dates, pitted

1 tbsp of smooth almond butter

1-2 tbsp of maca powder

1 small clementine, zest and 1 tbsp of juice

1½ tsp of ground mixed spice

1½ tsp of cinnamon

 

Toppings (optional): coconut yoghurt and goji berries

 

1 Place the cashew into a food processor and blend on a high speed until fine and crumbly. Add in the pitted dates, almond butter, maca powder, spices and the zest and juice of the clementine. Further blend until the dough holds together.

 

2 Roll into small bite sized balls and place in the fridge for at least half an hour to set. Top with a dollop of coconut and some goji berries to truly get into the Christmas spirit, or simply scoff them on their own!
