Red Velvet Energy Balls

Beets are the ultimate athlete superfood. Endurance boosting and anti inflammatory, beetroot is a great food to digest before exercising, and these red velvet energy balls are a perfect way to do that. Combined with gooey medjool dates and antioxidant super stars goji berries, a ball or two will help to boost and sustain those energy levels for even longer. Better yet, they’re completely refined sugar free, meaning you won’t crash half way through your workout.

 

Alternatively, they make a fabulous sweet treat for whenever those 4pm sugar cravings come knocking. To make them extra indulgent, top with cashew cream cheese to mimic the red velvet flavour combination, nourishing and delicious!

 

Ingredients: makes ten

½ cup of pecans

1 cup of cashews

½ cup of desiccated coconut

12 medjool dates 

3 tbsp of goji berries

2 tbsp beetroot powder (or ¼ cup of juice)

 

Cashew Cream Cheese

¼ cup of soaked cashews (2 hours)

¼ cup of almond milk

2 tbsp of lemon juice

1 tbsp of maple syrup

 

Start by placing the nuts in a food processor and blend until ground. You can then add in the remaining ingredients and blend until a dough forms and the mix holds together well. Roll the dough into little balls and set aside in the fridge to set for a few hours. To make the cashew cream cheese, blitz all the ingredients on a high speed until silky smooth. Add a dollop to the balls before eating and enjoy.
