Raw Nutella Rocky Roads

A few weeks back I developed one of my absolute favourite recipes of all time – peanut butter rocky roads. Since then, I’ve taken it a step further and dare I say this may be my new favourite. Raw nutella rocky roads. If that doesn’t make your mouth water, I don’t know what will.


Packed with chopped hazelnuts and buckwheat groats, the rocky road base is wonderfully crunchy and sits perfectly underneath the gooey nutella layer, topped with creamy homemade chocolate. They’re free from refined sugar and made with my one of my favourite superfoods - cacao. For the ultimate antioxidant treat, tuck into a raw rocky road for guilt free snacking at its best!



For the rocky road layer:

½  cup of cashews

½ cup of hazelnuts

1 cup of medjool dates, chopped

½ cup of buckwheat groats

3 tbsp of cacao powder


For the nutella layer:

½ cup of hazelnuts

1 tbsp of cacao

2 tbsp of maple syrup


For the chocolate:

¼ cup of coconut oil

2 tbsp of cacao powder

1.5 tbsp of almond butter



Start by making the rocky road layer by blitzing the cashews in a food processor until fine and no large pieces remain. Add in the chopped dates (make sure they’re gooey – if not, soak in warm water for an hour), cacao powder, half of the hazelnuts and blend until a dough forms. You can then add the buckwheat groats and the rest of the hazelnuts, blending for a few more seconds, ensuring they are combined into the mix but so the buckwheat groats are still whole. Press the mix firmly into a lined tin, around 1 inch thick.


Next, blend together the nutella ingredients and spread over the rocky road base. Set aside in the freezer whilst you make the remaining chocolate layer. Melt down the coconut oil in a saucepan and add the cacao and almond butter, gently whisking until silky smooth. Pour over the rocky road and place back into the freezer for a further hour. Once set, slice into squares and keep in the fridge until it’s time to enjoy.
