Raw Chocolate Brownies

Raw brownies are my go-to. I always have a big batch in my fridge and recently I’ve been experimenting with different flavour combinations and ways to incorporate them into other healthy plant-based goodies. If you’ve had a go at my peanut butter buckwheat rocky road recipe, you’ll see that the base is pretty similar. It’s oh so gooey and ridiculously indulgent tasting whilst containing a whole bunch of good for you ingredients. These simple double chocolate raw brownies, topped with goji berries and cacao nibs, makes for the most perfect treat, anytime of the day and can also be taken on the go.


Ingredients: makes 10

For the brownies

12 pitted dates (around ½ cup)

¾ cup of hazelnuts

½ cup of pecans

2-3 tbsp of cacao powder

2 tbsp of maple syrup


For the chocolate topping:

¼ cup of coconut oil

2 tbsp of cacao powder

2 tbsp of almond or cashew butter



Start by blitzing the hazelnuts and pecans in a food processor until nice and crumbly. Add the rest of the brownie ingredients and blend until a stiff dough forms and everything is combined. Tip the mixture out onto a lined baking tray and spread it out evenly, pressing down firmly. Place into the freezer to set for an hour.


In the mean time, make the chocolate top layer by melting the coconut oil in a saucepan with the cacao and the almond butter, whisk gently until smooth. Pour the chocolate over the brownie and sprinkle over your chosen topping. I chose goji berries and cacao nibs, but chopped nuts work really well too. Alternatively, you can leave your brownie plain. Place back in the freezer until the chocolate has set then slice into squares.
